At the heart of their operation is Il Castello, a celebrated Italian restaurant that was jump-started to popularity in 2000 after a glowing review from Doña Gula’s Vivir en El Poblado. Drawing from his father Roberto’s legacy of the Gaudenzzi pasta factory, Luigi has spent decades perfecting his craft through hands-on experience rather than formal training.
What started as Il Castello has slowly but steadily expanded into an integrated culinary empire. In addition to the flagship restaurant, Pasta Artesanale GLG encompasses the Pasta Artesanale GLG artisanal pasta factory, the adjacent Da Filippo restaurant featuring Neapolitan pizza and pastas, and the Tres Trigos bakery on the same block.
